Ever wondered what we do here at Fine Edge Knife Sharpeningto get your knives perfectly sharp?
Today we had this beautiful Aritsugu Deba brought in by a customer - for those that don’t know this is a Japanese hand forged blade from Kyoto - produced by one of the finest blade-smiths in the world
- This was a 50th birthday gift that the customer trusted us to get it back to its original glory after a fair bit of use and abuse
The customer opted for our full tune up, this includes:
- Rust removal and treatment
- Handle decontamination
- Chip removal
- Sharpening to a 10,000 grit finish
- Mirror Edge Finish with leather strop + fine compound
- Bone rehydration and conditioning
- Wood oiling and conditioning
We’re often asked what we actually do to get knives so sharp? - so with the customers permission we have put in some pictures of the process and a bit of an explanation:
- Unlike most, we refuse to use electric powered sharpening systems, instead our knife sharpening is completed 100% by hand - no belt sanders, no grinders and no mistakes
- Hand sharpening, whilst slower and more technical results in the removal of less material, less damage to the blade and an overall better finish
- We use a CNC machined jig to hold the knife in the perfect position, allowing a precise calibration of the sharpening angle, making the edge perfectly beveled, every time
- The stones of choice for this knife are 100% natural Arkansas whetstones ranging from 3000 - 10,000 grit - a perfect fit for this high carbon Japanese steel
- With over 40 whetstones in our arsenal, we pick the perfect stone to service your knives, but all are finished to 10,000 grit - which results in a very very sharp, durable edge
- Following sharpening all knives are finished with a leather strop to produce a smooth flawless mirror finished edge
- Additional services such as chip removal, reprofiling, decontamination, conditioning and rust removal are carried out prior to the final sharpening - ensuring nothing compromises the sharpness of the edge
