Over the past three Sundays, we’ve welcomed our Taste Buds community back to Noma for our annual summer events.

Across four workshops, our chefs opened up different corners of the Noma kitchen. Kenneth and Mario explored fermentation, teaching our Taste Buds how to make flavorful seasonings for everyday foods. Pablo shared some of the techniques behind a rose béarnaise; Francisco explained how we think about sweets after a meal; Mette invited us inside the Test Kitchen to talk about how our new ideas take shape.

Thank you to everyone who traveled from near and far to spend these Sundays with us in Copenhagen. It’s always special to bring together Taste Buds from around the world, share what we’re working on, and learn alongside one another.

What does Nariño coffee taste like?

Our question led us to Yacuanquer, a small township nestled within Nariño’s stark, pine-dotted mountain peaks. Here, volcanic soils and cool temperatures yield coffees with a juicy, citric acidity and distinct florality.

Jorge Armando Salazar is a pioneer of this landscape – one of the first in his community to focus on quality. His work is now inspiring a new generation of coffee farmers - his young neighbor, Andres, reverentially refers to him as “Don Jorge.”

“He was the first. He is the best,” he shrugs simply.

Noma’s take on a classic cold brew ☕️ Developed for long Danish summer days, this version is seasoned with our Wild Rose Vinegar and elderflower syrup. It’s delicate and floral, but concentrated enough to hold its own over plenty of ice. Start it the day before you plan to serve it, then strain and enjoy it cold!

Often involving a 45-degree angle ascent, the way up to Luis’ coffee trees is hard going at the best of times. On our last visit, we braved heavy rains to visit the plots at the top of the mountain. Thankfully we had some help making our way 🐕

Last year, we asked Luis to separate his Ombligón from the rest of his field blend. These are cherries that are grown at the very highest point of his farm. He bought this plot –his first- from his neighbour who was happy to let it go as it was so difficult to work. This turned out to be a blessing in disguise – as the high altitudes contribute to more complex flavors.

Our Head Roaster, Alastair, is a bit of a mystery. That’s why it’s fitting that he tasted the equally mysterious Ombligón this month.

Farmed by Luis Alberto Jojoa in the highlands of Huila, Colombia, this delicate variety is one of the rarest we’ve brewed at Noma Kaffe — so unique that its precise origins are unknown.
