Tokyo Tonkatsu Gabuu (東京とんかつ がぶう) is a premium tonkatsu restaurant located in the Ueno area, selected as one of Tabelog’s 2026 Tonkatsu Hyakumeiten (Top 100 Shops).
The restaurant specializes in high-quality, rare branded pork varieties from Japan (such as Ibaraki’s “Sannuemon”, Iwanaka, and TOKYO X). The chef uses custom fresh breadcrumbs, slow-frying the pork at a low temperature to lock in the juices before a quick high-temperature finish for a crispy crust and tender texture
