I have 3 new flavors to try out. Plum Jalapeño, Plum Habanero, and Mango Habanero.

If you missed the Bahamian Goat Salsa I still have some in stock, a naturally fruity Habanero flavor pepper that can't be found in stores.

Finished up the Plum Jalapeño Sauce.

Turned out REALLY good! I think I like it better than the Mango Habanero. Plum and Ripe Red Jalapeños seem to match well in flavor.

Ingredients:
Roasted Tomatoes
Roasted Red Jalapeños
Roasted Sweet Onion
Roasted Garlic
Plum Puree
Salt
Cu**in
Cilantro
9% Acid Vinegar
Citric Acid

Plum Habanero Hotsauce is done!

Similar recipe as the Mango Version, just a different type of Fruit.

12x 8oz Jars
7x 16oz Jars

Made a total of 4 batches today. 2x Mango Batches and 2x Plum batches.

Just finished the first batch of Mango Habanero.

I decided to Roast the Tomatoes, Habaneros, Onions, and Garlic before I added the Mango Puree.

Ingredients :
Roasted Tomatoes
Roasted Habanero
Roasted Sweet Onion
Roasted Garlic
Mango Puree
9% Acid Vinegar (less vinegar used)
Cu**in
Salt
Cilantro
Citric Acid

At first I was definitely skeptical 🫤 of the flavor before I pasteurized it. The Mango 🥭 flavor wasn't sticking out like I wanted, but after I pasteurized the sauce and tried the final product, the Mango flavor is way more noticeable. The heat is there from the Habanero on the back end, and the consistency is a little thicker than normal.

Overall, I like the final product. I was going to do a 70% Sauce to 30% Fruit, but it ended up closer to a 65% Sauce / 35% Fruit.

Cant wait for you all to give feedback.

Next up is Plum Habanero, and Plum Jalapeño sauces after I make one more batch of 16oz Mango Habanero.

I ran out of Fertilizer, but I have more on the way. Im switching from a 20.20.20 to a 25.5.15, ive noticed that some leaves are showing Magnesium lockup. So im dropping Phosphorus and increasing Nitrogen. Which from what I have seen, most of the best growers are using 5.1.3 ratio for peppers.

Next season Im hoping to have a more dialed in process. Ive been growing for over 10 years and still learn new stuff every season.

It actually sprinkled on me today when I was picking this small Summer harvest.

Took advantage of the overcast ☁️ this morning to clean up some plants. (West Texas has been 100F plus for a month straight it seems)

Picked some Spicy Ripe Red Jalapeños, Habaneros, Reapers, and Primotalii

Still have a lot more to pick, but I'll be getting to them this Sunday.

I planted around 50 or 60 Chef Choice Orange/Yellow tomato seeds this season because they're meaty, few seeds, taste great, and keep their vibrant colors when cooked.

Unfortunately, 90% of the seeds ended up being something different. The tomatoes were too watery, and too many seeds for salsa. I ended up just giving up on them after I saw most of the plants were producing the wrong tomatoes.

This right here is super annoying, I planted these seeds in March indoors and babied the plants for a good Spring Harvest, only to find out they're NOT what the label suggested.

It's not just seeds either, last few years I would buy plants from a nursery and the plants wouldn't be what they were labeled.

Something is going on with the seed suppliers. Are they just tossing random seeds in packs and just labeling them whatever they want? This is ridiculous!

Im just going to go back to growing LA Roma and call it a day. It seems like these hybrid are trash and unreliable. Hopefully the heirloom varieties will have a higher chance of being the correct tomato.

If anyone has any suggestions for a GOOD seed supplier, post it below. Because I bought from reputable sources and still got trash seeds.

Ok! So this plum puree came out way better than I expected. It taste kinda like red grapes. Very sweet!

Luckily I have another 6.5lb left. Im going to make another batch and use it to make 2 different types of sauce.

Plum Jalapeño
Plum Habanero

Mango puree photoed just to show color difference between the two.

The Plum puree was made with the plum skins intact, for higher fiber content and nutrients. It was simmered and reduced to a more thick puree, it was kind of runny when it first got blended up.

Batch # 65.2026 and 99.2026 have been pulled due to a bitter flavor.

Ill be harvesting a fresh batch of Tricked You Jalapeños next week and making a new batch of Mild Verde Jalapeño Sauce. It will be on the shelves in September!
