The paste moves into a series of decanters which first removes the liquid from the crush fruit matter, then the oil from the water. What emerges is fresh Abruzzo Olive Oil and we look forward to this liquid gold arriving in Boston soon!

Our olives moving through the mill. First the leaves and twigs are removed and the fruit is crushed, pits and all, and the paste is moved to the mallaxer which kneeds and mixes the paste which helps the oil prepare to separate from the solids.

2020 hasn’t been a banner year by any means, but one bright spot is that it was a phenomenal year for olives in Abruzzo! We’ve never seen the trees full of so much in travel fruit! Check out this clip of the harvest that took place last week outside of Sulmona!

Filmark Hospitality Group is very excited about our new venture just outside of Sulmona, in Introdacqua. An olive oil and black truffle estate we are calling Masseria Frattaroli, will produce olive oil and truffle products for use in Lucia Ristorante, Filippo Ristorante & Cafe, Ducali and B&B Sei Stelle beginning this fall!
