When the seafood is fresh, it’s time for a seafood boil. Nothing brings people together quite like a table full of perfectly seasoned Gulf shrimp, tender potatoes, smoky sausage, sweet corn, and juicy Dungeness crabs. The key to easy-peel shrimp is knowing exactly when to stop the cooking process and let the soak do the work. The result is perfectly seasoned seafood that’s packed with flavor from shell to tail. Seafood Boil with Gulf Shrimp & Dungeness Crab
Ingredients
• 5 lbs seafood boil seasoning
• 12 oz granulated onion
• 12 oz granulated garlic
• 3 oz liquid crab boil
• 1 bag yellow onions, peeled
• 4 heads garlic, halved
• 1 bag red potatoes
• 10 lbs large Gulf shrimp
• 4–5 links smoked sausage
• 1 package frozen corn
• 1 bag lemons, halved
• 4 oranges, halved
• 4–5 lbs Dungeness crabs
Directions
1. Fill your Even Embers boiling pot about halfway with water. Add the seafood boil seasoning, granulated onion, granulated garlic, and liquid crab boil.
2. Light the burner and bring the water to a rolling boil. Add the whole onions, garlic heads, and potatoes. Boil until the potatoes are fork tender, approximately 10–12 minutes depending on size.
3. Once the potatoes are cooked, add the shrimp and stir continuously. Bring the pot back to a rolling boil and watch carefully. As soon as the shells begin to separate slightly from the shrimp meat, usually within 60–90 seconds, turn off the heat.
4. Add the smoked sausage and corn.
5. Squeeze the lemons and oranges into the pot, then add the citrus halves along with the frozen Dungeness crabs. This quickly cools the cooking liquid, preventing the shrimp from overcooking while adding another layer of flavor.
6. Allow everything to soak for 15–20 minutes. Taste periodically to check seasoning levels and shrimp peelability. The longer the soak, the more flavor the seafood will absorb.
7. Drain and serve immediately with extra lemons, melted butter, and your favorite seafood boil dipping sauce.
Pro Tip: Easy-peel shrimp are all about the soak. Don’t overcook them in the boil—let the seasoned water do the work after the heat is turned off.
