$2 pepper baskets

This simple 3-ingredient cucumber salad is one of our favorites!

Great side with all the grilled things, especially fish!

2 cups cucumbers, sliced paper thin (I use my mandoline)
1/2 cup red onion, sliced paper thin
1/2 cup seasoned rice vinegar
S&P optional

Slice up cucumber and onion. Place in bowl and toss evenly with vinegar. Cover and refrigerate for 15 minutes.
