This week's share had some beautiful, perfectly shaped yellow squash. No matter its shape, one of the most delicious ways to serve yellow squash is roasted. Here's the recipe I tried this week to make good use of the yellow beauties. An aged parmesan cheese was the perfect finishing touch.

Roasted yellow squash is the perfect way to serve it! This easy method bakes summer squash with Parmesan and Italian herbs.

Check out this special eggplant that came in my share this week! Should I name it Eggplant Ennui? Or do you like Nightshade Noir, Indigo Woe, or Violet Gloom better? So many good items in this week's haul, but this guy takes the cake.

This week's share had a generous amount of green beans. While green beans are a delicious staple on their own, or roasted with a little oil and salt, they can also be used to add snap to snazz and other ordinary items. This green bean and corn frittata is a great way to let your green beans shine.

Savor the best of summer with this Blistered Green-Bean and Corn Frittata recipe that utilizes late-summer veggies.

About the CSA:

Community Supported Agriculture (CSA) is way to connect farmers and consumers, while stabilizing farmer income and distributing the risks inherent to farming. In general, the idea is to split the prospective harvest of a given farm into a number of “shares” and to pre-sell those shares to consumers before the season starts.

As a member of the Go God, Go Green CSA, you will have access to the choice picks of each weekly harvest from Teddy's farm in Floyd, VA. Pickups will take place in Roanoke or Salem. Upon pickup, you will be provided with a list and amount of the allotted items for that week. You can make your own selection or have Teddy choose for you. The size of each share will depend on the market rate and availability of the particular produce in that week's harvest.

There are two options for membership: a full 12 shares picked up weekly or 6 shares picked up twice a month. Twelve weekly shares will cost $25 per share for the duration of 12 weeks and shares can be paid either as one up-front payment of $300 or three payments of $100 each. The second option will provide 6 shares of $25 each to be picked up twice a month and can be purchased up front for $150 or a monthly payment of $50 for three months.

Teddy picking beans as he explains the endless battle with the weeds. It's a hard job for one man to keep up with all these gardens. Despite this, the plants still provide, and the beans are abundant. We're cooking up some new ideas for volunteer days, so keep an eye out.

Meet the farmer behind Go God, Go Green: Teddy Helm. He started his farm in 2021 on a few acres near Floyd, VA. He grew up in a family of traditional farmers and while he recognized and appreciated all the hard work his family put into farming, he never felt good about the chemicals they sprayed on their crops as part of traditional farming methods. He spent most of his adult life working in the mechanical trades but started to feel a discomfort with buying produce when he knew he had it in his blood to grow it. He also had a deep belief that God created the ecosystem to be in balance and that if you care for your crops right you won't need sprays to make delicious and healthy food. So, Go God, Go Green was born.
