Oysters are growing! We have gotten about a pound or so from this, with signs of more pinning ✨
These oysters won’t have a long shelf life, due to the fungus gnats that are thrilled to be here, so we will dry sauté them, add a bit of butter once they’ve dropped their water, and brown them— then freeze so we have some for another day.
This is our favorite way of preserving buggier mushrooms, or ones that don’t dehydrate well, like chanterelles or pholiota adiposa (chestnut mushrooms) 🤍

We scored some blocks from the fine folks at Rockhill Farms in Lebanon, OR.

These blocks have been fruited once at the farm, but still have some life left— so we built this in our garden.
The center is filled with chicken poo and straw, plus some more blocks that fell apart for the mycelium ✨
Oyster mushrooms will eat it all!

We are coming up on a week of Junetober weather here in the Willamette Valley, cooler and wet— perfect conditions for fruiting oyster mushrooms in a low tech and recycled way. We’ll keep you posted on the process 🍄‍🟫🩵
