A standard commercial freezer and a blast freezer are not interchangeable, even though they get treated that way all the time 🧊 The difference comes down to freezing speed. Standard freezers take 24 to 72+ hours to bring product down to temp, while blast freezers do it in hours. That gap changes everything downstream.

Slower freezing means larger ice crystals form inside the product, rupturing cell walls and damaging texture. Blast freezing forms tiny ice crystals instead, preserving moisture, texture, and overall product quality ❄️
