About the owner of ‘The Maine Menu’

Chuck Cyr was born and raised in Van Buren, Maine. Cyr has a passion for lobster rolls despite his award winning extensive menu. He has been perfecting the old fashion lobster roll for thirty-five years, no enhancements, no fillers, no B.S. Chuck fell in love with a small town in southwest Florida, but there was one monumental dilemma, no decent lobster rolls anywhere! Cyr made it his personal mission to bring this Maine classic to a small town on the West Coast of Florida. Fast forward seven years, Burgundy Square Cafe attracts patrons from over a hundred mile radius, selling over 11 thousand lobster rolls in 2017. Chuck stuffs 5 ounces of fresh Maine lobster into a traditional toasted bun, but that’s not the best news for the guest of Burgundy Square. They can choose hot or cold. Heated, Chuck warms the fresh lobster to the perfect temperature with a touch of drawn butter, creating a melt in your mouth impact with a slight crunch from the grilled bun. Cold is chilled to the ideal temperature hand mixed with the best savory mayonnaise Chuck could find, then stuffed into a warm crisp roll. Both are a classic that keep his clients coming back for more. Cyr’s hard work, persistence and dedication has paid off with being awarded Sarasota County’s best lobster roll, featured on ABC channel 7 news and landed in the 2018 World Lobster Roll competition! He still strives everyday to be the best and wins multiple awards every year. Chuck not only achieved his mission to bring the best damn lobster roll to this side of Florida, he has created one of the most exceptional restaurants along the way. Chuck has now opened ‘The Maine Menu’ food truck! His mission is to bring YOU the best lobster roll in south west Florida! What will it be, Hot or Cold?
