The secret to the perfect crust?

Cape Grim Beef Tallow.

Paired with a Cape Grim Reserve Scotch Fillet and a hot cast iron pan, it helps create that deep golden crust while letting the natural flavour of our 100% grass-fed beef take centre stage.

🥩Cape Grim Reserve Scotch Fillet with Beef Tallow🥩

• 1 Cape Grim Reserve Scotch Fillet Steak
• 1 tbsp Cape Grim Beef Tallow
• Sea salt and cracked black pepper

Bring the steak to room temperature and season generously. Heat a cast iron pan until very hot, add the tallow and allow it to melt and shimmer. Cook the steak for approximately 3 minutes per side for medium rare, depending on thickness. Rest for 5–7 minutes before slicing and serving.
