🍓 Recipe of the Month: No-Bake Summer Berry Cheesecake
Too hot for the oven? This fridge-set beauty is perfect for sunny weekends, BBQs, or just because.
🧁 Ingredients:
Base:
• 200g digestive biscuits
• 100g butter (melted)
Filling:
• 300g full-fat cream cheese
• 300ml double cream
• 75g icing sugar
• 1 tsp vanilla extract
Topping:
• 150g mixed berries (fresh or frozen)
• 1 tbsp sugar
• 1 tsp lemon juice
• A few extra fresh berries to garnish
👩🍳 Method:
1. Crush the biscuits into fine crumbs (food processor or rolling pin). Mix with melted butter and press firmly into the base of a springform tin. Chill for 30 minutes.
2. In a bowl, beat together the cream cheese, icing sugar, and vanilla until smooth. In a separate bowl, whip the cream to soft peaks, then fold it into the cream cheese mixture.
3. Spoon the filling onto the chilled base and level the top with a spatula. Chill in the fridge for at least 4 hours (or overnight for best results).
4. For the topping: Place the berries, sugar, and lemon juice in a small saucepan. Simmer gently for 5–7 minutes until the berries break down and the mixture thickens slightly. Cool completely.
5. Once the cheesecake is set, spoon the berry compote over the top and gently spread to the edges. Finish with a few extra fresh berries for decoration.
No oven. No faff. Just summer on a plate. 🍓☀️
