Harvesting lavender in Provence region, France is more complex work. Large fields has to be harvested by machines, in contrary to small Croatian fields that are harvested by hand. The result is that Croatian lavender is clean off the exhaust gasses.

Growing sage from seeds it's easy - but slow. You need to start indoors mid-February to mid-April.Transplant out or direct sow starting mid-April.
For indoor part you would need optimal soil temperature at 15-21C. Seeds should sprout in 2-3 weeks.
