In 1990, Mel partnered with Guinness Brewing Worldwide to develop the original Guinness Irish Pub Concept — a blueprint that brought authentic Irish pub culture to every corner of the globe.

At the heart of every great transformation is respect for what came before. Working with a beautifully old listed building, the journey begins with preservation — protecting the character, craftsmanship, and story already written into the walls.

Then comes the “during”: a careful reimagining. Traditional architectural details are honoured while layered with thoughtful design, atmosphere, and functionality. Every beam, brick, and space is considered — not replaced, but reinterpreted.
