Beholden is known for their nature vibe back at their Mangroves location, now they have become accessible by having a new branch in downtown Davao. This new branch though offers a different approach as it is positioned to be a third wave coffee shop.
The space has a nice aesthetic that is industrial, but with a crafty edge to it. Their bee branding doesn't just end at the logo but in the interior design itself, especially the hexagonal elements on the ceiling and the wall accent that is derivative of a bee hive. The space is quite nice and really cozy.
The style of ordering coffee here is different, you can choose the beans that you want for your espresso, each has a different flavor profile. During my visit the choices were Mt. Apo beans, one from an international source that I don't remember, and beans that are pour-over grade that is a grape co-ferment.
First I had Beholden XO, a signature drink, sadly it was very acrid, the extraction wasn't done properly -- i can barely taste the espresso plus the intense astringent after taste was undesirable. Then I was curious about their co-fermented beans from Quimbo, Colombia, so i ordered a pour-over. The coffee was a Tang grape juice in my mouth, but it was too bitter for my liking, the beans were ground using the same grinder for their espresso, which was calibrated for the espresso, i bet that is one of the reasons why the coffee was overly bitter, aside from the extraction itself. But I hope they will improve more as they are still new, and I like their concept. They just need to train their barista more and be immersed with the specialty coffee community, especially the brewing community.
