👨‍🍳Homemade Mexican Pizza

1 pound lean ground beef
1 packet (1 ounce) taco seasoning
1/2 cup water
6 medium flour tortillas
1 can (16 ounces) refried beans
1 can (10 ounces) red enchilada sauce
1 cup shredded cheddar cheese
1 cup shredded pepper-jack cheese
1 Roma tomato, diced
1 green onion, diced
1 small can sliced black olives

Preheat oven to 375°F. Spray two baking sheets with non-stick spray. Place 3 tortillas on each sheet.
Bake the tortillas for 3-5 minutes, flip them, and bake for another 2-5 minutes until golden and crispy. Set aside.
In a skillet, cook and crumble the ground beef over medium-high heat. Drain the grease.
Add taco seasoning and water to the beef, bring to a boil, then reduce heat to medium-low. Simmer for 10 minutes and set aside.
In a microwave-safe bowl, warm the refried beans. Spread a thin layer of beans on one tortilla.
Top with 1/3 of the meat mixture, then place another tortilla on top.
Spread 3 tablespoons of enchilada sauce on the top tortilla. Sprinkle with cheddar and pepper-jack cheese. Add diced tomato, green onion, and sliced black olives.
Repeat this process with the remaining tortillas to create three pizzas in total.
Bake the pizzas for 5 minutes, or until the cheese is melted and bubbly. Allow them to cool slightly before slicing and serving.

Sausage Cream Cheese Crescents 😍😋

Ingredients 📋
1 lb ground sausage
1 package (8 oz) cream cheese, softened
2 cans (8 oz each) refrigerated crescent roll dough
1/2 cup shredded cheddar cheese (optional)
Instructions 🥣
Preheat Oven:
Preheat your oven to 375°F (190°C).
Cook Sausage:
In a large skillet over medium heat, cook the ground sausage until fully cooked, breaking it up into small pieces as it cooks. Drain any excess grease.
Mix with Cream Cheese:
In a medium mixing bowl, combine the cooked sausage and the softened cream cheese until well mixed. If desired, fold in the shredded cheddar cheese.
Prepare Crescent Rolls:
Unroll the crescent roll dough and separate it into individual triangles.
Fill Crescents:
Place a generous tablespoon of the sausage and cream cheese mixture onto the wide end of each crescent roll triangle. Roll up the dough, starting at the wide end, and place the crescents on an ungreased baking sheet.
Bake:
Bake in the preheated oven for 11-13 minutes, or until the crescents are golden brown.
Serve:
Serve warm and enjoy!

Beef and Cheese Chimichangas
Ingredients:
6 large flour tortillas
1 lb ground beef
1 onion, finely chopped
2 cloves garlic, minced
1 teaspoon cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup cheddar cheese, shredded
1/2 cup Monterey Jack cheese, shredded
Vegetable oil, for frying
Salsa, sour cream, and guacamole, for serving

Directions:
In a skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is soft. Drain any excess fat.
Stir in cumin, chili powder, salt, and pepper, and cook for another 2 minutes.
Remove from heat and let the mixture cool slightly. Then mix in the cheddar and Monterey Jack cheeses.
Spoon about 1/6 of the beef and cheese mixture onto the center of each tortilla. Fold the sides of the tortilla in, then roll up from the bottom to enclose the filling completely.
Heat a large amount of vegetable oil in a deep skillet over medium-high heat. Fry the chimichangas until golden brown on all sides, turning as needed. Drain on paper towels.
Serve hot with salsa, sour cream, and guacamole on the side.

Red Snapper with Creamy Creole Sauce

Ingredients:

For the Red Snapper:

4 red snapper fillets
2 tablespoons olive oil
Salt and pepper, to taste
1 tablespoon Cajun seasoning
For the Creamy Creole Sauce:

1 tablespoon butter
1 small onion, finely chopped
1/2 green bell pepper, finely chopped
1 celery stalk, finely chopped
2 cloves garlic, minced
1 tablespoon all-purpose flour
1 cup chicken or seafood stock
1/2 cup heavy cream
1 tablespoon tomato paste
1 teaspoon Creole seasoning
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper (optional for extra heat)
Salt and pepper, to taste
1 tablespoon fresh parsley, chopped
Directions:

Prepare the Red Snapper:

Pat the red snapper fillets dry with paper towels.
Season both sides of the fillets with Cajun seasoning, salt, and pepper.
Heat olive oil in a large skillet over medium-high heat.
Sear the red snapper fillets for 3-4 minutes per side, or until cooked through and lightly golden. Transfer to a plate and cover to keep warm.
Make the Creamy Creole Sauce:

In the same skillet, melt the butter over medium heat.
Add the chopped onion, bell pepper, and celery. Sauté for 3-4 minutes until softened.
Stir in the garlic and cook for another minute until fragrant.
Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes to remove the raw flour taste.
Gradually whisk in the chicken or seafood stock, followed by the heavy cream and tomato paste.
Add the Creole seasoning, smoked paprika, cayenne pepper (if using), salt, and pepper.
Let the sauce simmer for 5-7 minutes, stirring occasionally, until thickened and creamy.
