Ever notice bright blue flowers with twiggy stems along roadsides and highways?
That striking plant is called chicory (Cichorium intybus), and it has some surprisingly cool benefits.
Chicory is a perennial plant native to Europe, western Asia, and central Russia. It’s easily recognized by its vivid blue flowers and woody stems, which are tough enough to damage mower blades!
🌿 Botanical Features:
• Flowers: Bright blue; bloom from early summer to fall
• Stems: Woody and rigid, often growing upright or spreading
• Habitat: Common along roadsides, in fields, and open grassy areas
🌿 Uses of Chicory:
1. Food:
• The young leaves can be blanched and added to salads or cooked like leafy greens.
• The roots are often roasted and ground to create a caffeine-free coffee substitute, a tradition dating back to the 1800s.
2. Inulin Source:
• Chicory roots are rich in inulin, a natural dietary fiber used as a prebiotic and low-calorie sweetener in many health foods.
