I harvested my first ever luffa today 🎉

It was a little early but it got damaged on the bottom yesterday and I couldn’t stop worrying about it rotting and figured it would be cool to see inside whether it was ready or not. To my surprise it’s perfect, just no save-able seeds inside. I can’t wait for it to finish drying out and my make my own sponge 🧽 🤪

When it’s time to harvest more I’ll definitely take a video of the process because it was pretty neat!

Tomato & Jalapeño Salsa

2 lbs tomatoes
1 medium onion
2 jalapeños (seeded)
1/4 cup finely chopped cilantro
1 tsp salt
1 tsp black pepper
2 cloves garlic
1/4 cup lime juice

Wash & prep veggies. Put in food processor and blend up then transfer to a large pot and add seasonings and lime juice. Bring to a boil then reduce heat and simmer for 5 minutes. Ladle hot salsa into hot, 1/2 pint jars - leaving 1/2 inch headspace.
Process jars in water bath canner for 15 minutes

*Should make about 6 jars of salsa*

Im really excited for this!

Back in April I bought 2 small luffa plants, planted them in mid May. I wasn’t sure they were going to live, they looked a little sad but here they are in mid August, THRIVING 💚

Another round of roasted tomato sauce going in 🍅

We’ve harvested close to 230 lbs of tomatoes so far and they’re still coming plus peppers, beans and corn daily. My goal is to preserve a years worth of sauce and diced tomatoes, maybe a few jars of salsa.

I’m blessed to be so overwhelmed with all produce from our garden 😌

Red Pepper Flakes 🌶️

From my garden ➡️ pantry

Take your cayenne peppers and wash them real good, slice them in half (leave seeds in. I also added a few jalapeños from my mother in law I forgot I had, sorry Vernie 🤪) and place them on a parchment lined baking sheet. Put the tray in the oven and set the temperature as low as it goes (mine is 200°) periodically check the peppers and give the pan a little shake / toss the peppers around. After a few hours the peppers will be dry and shriveled up. Turn off the oven and let them cool down completely. After cooled, grind the peppers up in a food processor or be like me and put them in a jar and smash them up with a spoon 😂 The peppers should break apart very easily at this point.

Store in an air tight container 🫙

Roasted tomato sauce coming in hot 🤤

Remove core and and weird spots from your clean tomatoes, slice in half and place skin side down in a roasting pan. Add olive oil, onion, garlic and spices. Roast in preheated oven at 400 from 35-40 minutes. Let it sit and cool for about 10 minutes then blend! I’m going to be canning these along with some diced tomatoes today but you could obviously eat it right away!
