Water heater pilot light:
No need to turn you water heater to “pilot” the gas regulators will only fire the burner if there is a demand and unless your water heater is completely empty (not possible without draining) it will not harm the unit. The water heater sits idle with the pilot lit anyway.

What to do if the water is off.
-Open the faucets in you bathrooms ( this will give a place for the water to go if they start freezing)
-Keep cabinet doors open so heat can reach pipes ( when we have power).
-No need to shut main off ( only if there is a problem shut it off)
-Pipes tend to burst when they freeze cause the water expands and has no place to go ( open faucets).
