Do you have extra cucumbers?? One of our favorite treats are muffins and below is the recipe we make to use up some of the extra cucumbers.
Chocolate chip cucumber muffins
Ingredients
1 ½ cups all-purpose flour
½ cup granulated sugar or brown sugar
1 tsp ground cinnamon
1 tsp baking powder
1 tsp baking soda
½ tsp salt
½ cup vegetable or neutral oil
2 large eggs
1 tsp vanilla extract
1 cup shredded cucumber (blotted dry with a paper towel)
½ cup semi-sweet chocolate chips
Baking Steps
Prep: Heat your oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
Mix Dry: Whisk the flour, sugars, cinnamon, baking powder, baking soda, and salt in a large bowl.
Mix Wet: In a separate bowl, stir the oil, eggs, and vanilla extract together.
Combine: Fold the wet ingredients into the dry ingredients just until combined. Do not overmix.
Add Veggies & Chips: Gently stir in the grated zucchini and chocolate chips.
Bake: Spoon the batter into the muffin cups. Bake for 20 to 22 minutes until a toothpick inserted in the center comes out clean.
**Make sure to peel and remove the seeds for the cucumbers
*** sometimes we make them double chocolate by adding 1/3 cup of coaco.
**** when we have alot of extra cucumbers we shred and squeeze dry with a cheese cloth and then freeze in 1 cup portions
