My breaker keeps tripping every afternoon when the AC kicks on. Why?

The timing is the tell. Afternoon is the hottest stretch of the day, so your compressor pulls the most power right when it trips. That points to a system straining harder than it should.

Should I replace my AC and furnace together or one at a time?

It comes down to the age and health of each one. But more often than folks expect, replacing them together is the smarter money move.
