Doritos Taco Cups 🌮

Prep Time: 15 minutes
Cook Time: 15 minutes
Servings: 12 taco cups

Ingredients
1 large bag Nacho Cheese Doritos
1 lb ground beef
1 packet taco seasoning
1/3 cup water
1½ cups shredded cheddar cheese
1 cup shredded lettuce
½ cup diced tomatoes
¼ cup diced onions
½ cup sour cream
2 green onions, chopped (optional)
Cooking spray
Instructions
1. Preheat the oven: Set your oven to 350°F and lightly grease a 12-cup muffin tin with cooking spray.
2. Cook the beef: In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess grease.
3. Season the meat: Add taco seasoning and 1/3 cup water. Stir and simmer for 3–5 minutes until the mixture thickens.
4. Make the Doritos cups: Carefully arrange 5–7 overlapping Doritos in each muffin cup, pressing them gently against the bottom and sides to create a bowl shape. Smaller broken pieces can help fill gaps.
5. Add the filling: Spoon seasoned ground beef into each Doritos cup, being careful not to overfill.
6. Top with cheese: Sprinkle shredded cheddar cheese generously over the beef.
7. Bake: Place the muffin tin in the oven for approximately 5–8 minutes, or until the cheese is melted and bubbly. Watch closely so the chips don't burn.
8. Add toppings: Allow the taco cups to cool for 2–3 minutes before carefully removing them from the muffin tin. Top with shredded lettuce, diced tomatoes, onions, and a dollop of sour cream.

🥓 Slow Cooker Crack Chicken Soup

Ingredients
1½–2 lbs boneless, skinless chicken breasts
8 oz cream cheese, softened
1 packet ranch seasoning mix
4 cups chicken broth
1½ cups shredded sharp cheddar cheese
6 slices bacon, cooked and crumbled
½ cup diced onion
3 cloves garlic, minced
½ teaspoon black pepper
¼ cup chopped green onions
Salt to taste
Instructions
1. Prepare the slow cooker: Place the chicken breasts in the bottom of a 6-quart slow cooker.
2. Add the ingredients: Add diced onion, minced garlic, ranch seasoning, black pepper, and cream cheese. Sprinkle 1 cup of shredded cheddar cheese over the top.
3. Pour in the broth: Slowly pour chicken broth into the slow cooker, making sure the chicken is mostly submerged.
4. Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken reaches an internal temperature of 165°F and is tender.
5. Shred the chicken: Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
6. Make it creamy: Stir everything together until the cream cheese is completely melted and incorporated into the broth.
7. Add the bacon: Stir in most of the cooked, crumbled bacon, reserving some for garnish. Add the remaining ½ cup cheddar cheese and stir until melted.
8. Let it thicken: Cover and cook on LOW for another 10–15 minutes, stirring occasionally until creamy and heated through.
9. Serve and enjoy: Ladle into bowls and top with extra shredded cheddar, crispy bacon, chopped green onions, and freshly cracked black pepper.
