Today is Stop Food Waste Day. While most of the conversation centers on purchasing and storage (still important), there's an equipment layer that doesn't get enough attention.

Refrigeration running above safe temperature zones accelerates spoilage. Ovens and steamers that can't hold calibration lead to inconsistent cook times and product loss. Walk-in coolers with failing door seals cause temperature drift that operators often don't catch until product is already compromised.

Keeping equipment properly maintained and running to spec is one of the most direct ways a kitchen can reduce waste. A repair that costs a few hundred dollars can prevent hundreds of pounds of product loss over the course of a season.

The most sustainable piece of equipment is the one that keeps working.

We’re excited to recognize Jacqueline Yoder, General Manager overseeing ESI, Yukon Refrigeration, and Tech24 in Des Moines, Iowa.

Jacqueline started with ESI in 2011 and joined the Tech24 family when they were acquired in 2020. She enjoys learning from her peers, who challenge her thinking and push her to be her best self. She values efficiency, knowledge sharing, customer satisfaction, and strong financial performance. She’s equally passionate about building a supportive, collaborative culture within her team.

Stadium and arena kitchens don't get the benefit of a slow Tuesday. When the gates open, every piece of equipment has to perform, and the margin for downtime is essentially zero.

High-volume foodservice operations require a different level of equipment readiness. Multi-unit coordination, rapid-response service, and preventative maintenance schedules built around event calendars.

Every game is a high-stakes window. Treat it that way by taking equipment maintenance seriously.

Before summer volume hits, your cooking equipment deserves more than a visual check. Run through each of these with your service provider.

Ovens, Ranges, Fryers, Grills & Steamers:
- Inspect and clean burners
- Check and calibrate temperature controls
- Inspect gas lines and connections for leaks
- Clean grease traps and filters
- Inspect and clean interior surfaces
- Check door seals for proper closure
- Verify proper ventilation and exhaust
- Test safety shut-off valves
