WORLD COCONUT DAY

HOMEMADE COCONUT CREAM PIE

CRUST

1¼ cups all-purpose flour
½ teaspoon salt
1 teaspoon granulated sugar
½ cup cold unsalted butter, cut into small cubes
3 to 5 tablespoons ice water

Whisk together the flour, salt and sugar.
Cut in the cold butter with a pastry cutter or fork until the mixture resembles coarse crumbs with a few pea-sized pieces of butter remaining.
Add the ice water one tablespoon at a time, mixing gently until the dough begins to hold together.
Form the dough into a disk, wrap it and refrigerate for at least 30 minutes.
Heat the oven to 375°F. Roll the chilled dough into a 12-inch circle and place it in a 9-inch pie plate. Trim and crimp the edges.
Line the crust with parchment paper and fill it with pie weights or dried beans.
Bake for 15 minutes. Remove the parchment and weights, then bake for another 10 to 12 minutes, until golden brown.
Allow the crust to cool completely.

COCONUT CREAM FILLING

1 can full-fat coconut milk, 13.5 ounces
1½ cups whole milk
¾ cup granulated sugar
¼ cup cornstarch
¼ teaspoon salt
4 large egg yolks
2 tablespoons unsalted butter
1 teaspoon vanilla extract
½ teaspoon coconut extract, optional
1 cup sweetened shredded coconut, toasted and divided

Whisk the sugar, cornstarch and salt together in a medium saucepan.
Add the egg yolks and whisk until smooth.
Gradually whisk in the coconut milk and whole milk.
Cook over medium heat, whisking constantly, until the filling begins to boil and thicken.
Continue cooking and whisking for one minute.
Remove the pan from the heat. Stir in the butter, vanilla, optional coconut extract and ¾ cup of the toasted coconut.
Pour the warm filling into the cooled pie crust.
Press plastic wrap directly onto the surface of the filling to prevent a skin from forming.
Refrigerate for at least four hours or until completely chilled and firm.

WHIPPED CREAM

1½ cups cold heavy whipping cream
3 tablespoons powdered sugar
1 teaspoon vanilla extract

Beat the cold heavy cream, powdered sugar and vanilla until medium-stiff peaks form.
Spread or pipe the whipped cream over the chilled pie.
Sprinkle the remaining toasted coconut on top.
Keep refrigerated until ready to serve

HAPPY FIRST DAY OF SEPTEMBER!

As a new month begins and students return to school, please slow down, stay alert and give yourself extra travel time. Watch carefully near schools, bus stops, neighborhoods and parked vehicles. Children can be difficult to see and may unexpectedly dart into the street.

Michigan drivers should remember:

Flashing yellow school-bus lights mean prepare to stop.
Flashing red lights mean stop at least 20 feet from the bus.
Remain stopped until the bus begins moving or the red lights stop flashing.
Drivers traveling in both directions must generally stop. The exception is traffic approaching from the opposite direction on a roadway separated by a raised median, physical barrier or another divider that impedes traffic.
Never pass a school bus with its red lights flashing and stop arm extended.

Illegally passing a stopped school bus is a civil infraction that may carry a fine of up to $500. More importantly, one impatient decision could change a child’s life forever.

Put down the phone, watch your speed and expect the unexpected. Let’s work together to keep every student safe throughout the school year.

NATIONAL SPORT SAMPLING DAY

Today is National Sport Sampling Day—a day that encourages children and families to try a new sport or return to one they have not played in a while.

Every sport offers something different. Soccer builds endurance and teamwork, baseball and softball develop coordination, basketball improves agility, hockey encourages discipline, and swimming builds strength and confidence. Children can also explore volleyball, tennis, golf, track and field, gymnastics, martial arts, cheerleading and dance.

Dance is both an art and a physically demanding sport that helps students develop strength, flexibility, coordination, confidence and self-expression.

Miss Danielle’s School of Dance in Freeland is entering its 32nd year of providing quality, affordable and friendly dance education. The studio offers ballet, tap, jazz, hip-hop and pointe classes for students ages three through adult. Registration for Fall 2026 classes is currently open.

Today is National Banana Lovers Day!

Bananas are affordable, naturally sweet and perfect for everything from smoothies and banana bread to an unforgettable homemade dessert. Celebrate by making warm Bananas Foster and serving it over creamy homemade vanilla ice cream.

HOMEMADE BANANAS FOSTER

• 4 firm, ripe bananas
• 4 tablespoons unsalted butter
• ½ cup packed brown sugar
• 1 teaspoon cinnamon
• ¼ teaspoon salt
• 1 teaspoon vanilla extract
• ¼ cup dark rum
• 2 tablespoons banana liqueur, optional
• Homemade vanilla ice cream

Peel the bananas and slice them in half lengthwise, then cut each half crosswise.
Melt the butter in a large skillet over medium heat.
Stir in the brown sugar, cinnamon and salt. Cook for two minutes, stirring until the mixture is smooth and bubbling.
Add the bananas and gently cook for one to two minutes on each side.
Remove the skillet from the heat before adding the rum and optional banana liqueur.
Return the skillet to low heat and simmer for two to three minutes until the sauce thickens slightly. Stir in the vanilla.
Spoon the warm bananas and caramel sauce over vanilla ice cream and serve immediately.

Vanilla Ice Cream

• 2 cups heavy whipping cream
• 1 cup whole milk
• ¾ cup granulated sugar
• 1 tablespoon pure vanilla extract
• ⅛ teaspoon salt

Whisk the milk, sugar and salt together until the sugar dissolves.
Stir in the heavy cream and vanilla.
Cover and refrigerate the mixture for at least two hours or overnight.
Pour it into an ice-cream maker and churn according to the manufacturer’s directions.
Transfer the ice cream to a covered freezer-safe container and freeze for two to four hours for a firmer texture.

No ice-cream maker? Pour the mixture into a shallow freezer-safe pan. Freeze it and stir vigorously every 30 minutes for approximately three hours, breaking up the ice crystals each time.

Local dog rescues and animal shelters depend on community support. You can make a difference by:
