Sour Cream Chicken Enchiladas
2 cups cooked chicken, shredded
1lb Monterey Jack cheese
12 tortillas (corn or flour)
-soften tortillas in oil or microwave - fill and roll with chicken and cheese - place in shallow pan
Sour cream sauce
1/4 cup butter
2 tbsp flour
2 cups chicken broth (or 1 can)
1 cup sour cream
1/3 cup jalapeño juice (optional)
-melt butter and add flour and broth until thickened - add sour cream and cook until hot (not boiling) - pour sauce over enchilada and bake for 20 minutes in 350 degree oven.
