"Uh, mommy, there's still hair on the rabbit..."
"Okay, I see it. You process it next time."
"No!"
Kids, man. Critics of everything.
This rabbit belly is all that's left from the two rabbits that were processed at Hatch & Hoof Homestead
rabbit class on Saturday.
Yesterday, I broke the two bodies down into pieces, marinated them, and they were roasted in the oven for dinner.
The bones were then thrown into the crockpot for hone broth wirh some of the trimmings.
This morning, I did a quick marinade of one belly in some salt, pepper, maple syrup, and balsamic vinegar, then sliced it and fried it in a skillet for a bacon type meat. It wasn't amazing, but it was good enough, especially when pork bacon is off the table for me.
