𝗪𝗵𝗲𝗻 𝘁𝗵𝗲 𝗴𝗮𝗿𝗱𝗲𝗻 𝗳𝗮𝗶𝗹𝘀… 𝘄𝗲 𝗶𝗺𝗽𝗿𝗼𝘃𝗶𝘀𝗲｡ 🇷🇴🔥🍅🧅🍆

Between the Texas drought and all our traveling this year, my garden basically handed in its resignation. 😂 So I headed to Cedar Market Ranch in Dallas, loaded up on fresh veggies, and decided to make something that tastes like home.

𝗭𝗔𝗖𝗨𝗦𝗖Ă. ❤️

If you grew up Romanian, you KNOW. Roasted eggplant, peppers, onions and tomatoes slowly cooked down into the most delicious smoky vegetable spread. And the secret for me? 𝗙𝗶𝗿𝗲 𝗿𝗼𝗮𝘀𝘁𝗶𝗻𝗴 𝘁𝗵𝗲 𝘃𝗲𝗴𝗲𝘁𝗮𝗯𝗹𝗲𝘀 𝗳𝗶𝗿𝘀𝘁🔥

In this reel I’m taking you along from market ➡️ peeling ➡️ chopping ➡️ simmering ➡️ canning ➡️ that glorious pot of zacuscă.

This is one of those foods that instantly takes me back to Romania. We eat it spread on good crusty bread, and somehow one jar never lasts very long around here.

I’ll share a recipe link for anyone brave enough to join the 𝐙𝐚𝐜𝐮𝐬𝐜ă 𝐂𝐥𝐮𝐛. 🇷🇴😂

And Romanian friends… important question: 𝑫𝒐 𝒚𝒐𝒖 𝒎𝒂𝒌𝒆 𝒚𝒐𝒖𝒓𝒔 𝒘𝒊𝒕𝒉 𝒆𝒈𝒈𝒑𝒍𝒂𝒏𝒕 𝒐𝒓 𝒘𝒊𝒕𝒉𝒐𝒖𝒕? 👇

🐇 Rabbit Processing Day at Romarican Acres! 🌱

Today we processed four meat rabbits, and it was our first time doing it ourselves! Definitely a new experience for us, but another step toward becoming more self-sufficient here at Romarican Acres.
I know eating rabbit isn't something that a lot of people are used to, but rabbit meat is lean, high in protein, and lower in fat than many of the meats we commonly eat. It's actually been part of traditional diets in many cultures for generations.

One of the things that makes raising rabbits so interesting is how quickly they reproduce. A healthy doe can have babies about every 30 days, with litters commonly ranging from 6–10 kits, and meat rabbits can often be ready for processing in roughly 8–12 weeks, depending on the breed and how they're raised.

It definitely isn't for everyone, and today was a little bittersweet, but this is part of our journey toward knowing where our food comes from, raising it ourselves, and becoming more self-sufficient. 🌱🐇

The Texas Sage is showing off again! 💜🐝
Every time it blooms, the bees show up right on cue. It's always fun to stop for a minute and watch them go from flower to flower, collecting nectar and doing what they do best.
Moments like these are one of the reasons we love life at Romarican Acres. A little slower, a little quieter, and full of the small things that make every day special.

Summer is fig season, and our kitchen is filled with the sweet aroma of fresh figs! There's nothing quite like turning freshly picked fruit into homemade fig jam. Every jar is made with love, capturing the flavor of summer to enjoy long after the season is over.

Fresh. Homemade. Delicious.
Have you ever tried homemade fig jam? What's your favorite way to enjoy it—on toast, biscuits, cheese boards, or straight from the spoon?

Just found the funniest thing at Tractor Supply today
It’s a lip balm called “Chicken Poop”
Don’t worry—it’s not what it sounds like
It’s actually a natural lip balm that’s supposed to help with dry, cracked lips.
Only in a farm store would you find something with a name like this
Has anyone tried it?

Week 3/6 💪😅

How do you keep going when every fiber of your being wants to quit?

Three weeks ago, I set a goal to get strong again. The wake-up call came when I realized I couldn’t easily pick up my 9-year-old anymore. Yes, she’s bigger now… but in my mind, I was stronger too. Apparently, my mind and my muscles hadn’t had a staff meeting lately. 🤦🏽‍♀️

I want to be around for a long time. I want to travel, garden, chase grandkids someday, and still be able to carry my own groceries without sounding like an old pickup truck trying to start.

So here I am… pushing through weak knees, sore muscles, and the heartbreaking reality that my relationship with Asian food may need some boundaries for a while. 😑🍜

My goal is to drop 5% body fat and build some muscle along the way. Although after four rounds of these exercises, that goal feels both inspiring and highly suspicious. 😅

Progress isn’t always pretty. Some days it’s just showing up and doing the thing anyway.

What’s your biggest motivator when you feel like giving up on something hard?
