Another easy garden to table recipe. Today is salsa verde. This is a great fresh salsa to add to tacos, burritos, or as a dip.

Easy Salsa Verde
-12 to 14 peeled tomatillos
-1/2 white onion (halved)
-2 cloves garlic
-1 jalapeño*
-1 cup cilantro
-juice from 1/2 lime
-1/2 Tbsp Kosher salt

*This recipe is medium heat. For a milder version, scoop out jalapeño seeds. For a spicy version, use 2 jalapeños.

Preheat oven to 400F. Place tomatillos, onion, garlic, and jalapeño on a baking sheet. Drizzle with olive oil and roast for 10-15 minutes. Cool slightly. Add roasted veggies to a blender and add cilantro, lime juice, and salt. Blend until well mixed. Keep refrigerated or frozen.

We’ve seen some really beautiful insect friends in the garden this year. Monarch and Swallowtail caterpillars, Hummingbird moths, dragonflies. Adding Swamp Milkweed to the pollinator garden has proven to be a great decision. We’ve had a record number of monarch caterpillars this year. It’s been a much better host plant than my Buttery W**d so far. Seeing these garden friends makes all the weeds, pest damage, and bad harvests worth it 💚💚💚.

Easy garden to table recipe! I love making pickles from all the cucumbers I harvest from my backyard garden. Refrigerator pickles are super easy. I make several types, but garlic dill pickles are a favorite.

2 cup water
2 cups distilled 5% white vinegar
3 Tbsp picking or kosher salt
Heat in a pot, stirring until solution is clear

To 2 quart sized mason jars, add to each jar 10-15 whole black peppercorns, 2 garlic cloves, and a sprig or two or fresh dill. Add prepared cucumbers. Carefully pour over hot brine, completely covering cucumbers. Optional, add 1 tsp Ball pickle crisp granules. Wipe rims of jars and add lids/rings. Refrigerate for 2 weeks before eating.
