Ingredients for Carrot Cake:
1 1/2 cups granulated sugar
1 cup vegetable oil
3 eggs
2 cups all-purpose flour
1 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
2 cups grated carrots (about 4 medium carrots)
1 cup chopped pecans or walnuts (optional)
1/2 cup crushed pineapple, drained (optional)
Ingredients for Cream Cheese Frosting:
1/2 cup unsalted butter, softened
8 oz cream cheese, softened
1 tsp vanilla extract
4 cups powdered sugar, sifted
Steps to Prepare Carrot Cake:
Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or two 9-inch round cake pans.
In a large bowl, beat together the sugar, oil, and eggs until smooth and creamy.
In a separate bowl, sift together the flour, baking soda, baking powder, salt, and cinnamon. Gradually add to the wet ingredients, mixing well.
Fold in the grated carrots and nuts (if using). If you like a moister cake, you can also add the crushed pineapple.
Pour the batter into the prepared pan(s).
Bake for 25-30 minutes for round pans, or 40-45 minutes for a 9x13 pan, or until a toothpick inserted into the center of the cake comes out clean.
Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
Steps to Prepare Cream Cheese Frosting:
In a medium bowl, beat together the butter and cream cheese until smooth and creamy.
Add vanilla extract.
Gradually beat in the powdered sugar until the frosting is smooth and spreadable. If the frosting is too thick, you can add a teaspoon
of milk at a time until you reach the desired consistency.
To Assemble:
If you baked two round cakes, use a long serrated knife to trim the tops if they are not flat, to help the layers sit better on each other.
Place one layer of the cake on a serving plate. Spread a layer of frosting on top.
Place the second layer of cake on top of the first layer, then spread frosting on top and around the sides of the cake evenly.
Sprinkle the top with the remaining chopped pecans or walnuts.
Chill for about an hour to set the frosting before serving.
