Persimmons ripen late in the season, and our trees are bowing with the weight of this brilliant orange fruit (and tempting the local raccoons). Naturally high in tannins, Persimmon is astringent and tough until the frost comes to help push the sugars and sweeten the harvest. The species name, Diospyros, translates to Food of the Gods, and the soft ripe fruit, a true berry, is sometimes ready even after all leaves have dropped. High in vitamin C, potassium and a source of dietary fiber, it finds its way into a variety of sumptuous desserts.
