What one dozen eggs got me:
š„ One angel food cake
š„ A quadruple batch of sourdough pasta for the freezer
The hens have been laying like theyāre trying to break records lately, and weāre doing our best to keep up. We had an egg bake the other day, our customers bought every dozen we had available, and then the girls went right back to work and laid even more. š
With yesterdayās weather bouncing between sunshine and rain, it felt like the perfect day to stay busy in the kitchen during the gloomy moments. Not that I need much encouragementāI canāt sit still anyway.
Now we have an angel food cake waiting to be enjoyed and enough homemade pasta tucked away in the freezer to make a few summer dinners a little easier.

*One quick note: todayās pasta was made using only egg yolks. Once you get comfortable making pasta from scratch, you learn thereās more than one way to make a great dough. Extra yolks, a little olive oil, and the right amount of moisture make for an incredibly rich pastaābut thatās a conversation for another day. šš
