Project Highlight: Wildland

Located in the former Morey Boogie Boards factory, Wildland is a restaurant, bar, and bakery created by partners John Resnick and Eric Bost. This neighborhood café and bar invites guests to either grab a quick bite or settle in for a leisurely visit, with an in-house bakery and a menu featuring fresh pastas and seasonal dishes prepared in a rotisserie and wood-fired pizza oven. The bakery will supply Wildland with freshly baked breads and pastries while also supporting the Michelin-starred team’s other restaurants, Jeune et Jolie and Campfire. Spanning 8,000 square feet, the restaurant’s open floorplan includes an exhibition kitchen where guests can see the active bakery behind a long counter and pastry cases. A custom beige Mugnaini wood-fired oven takes center stage in the kitchen, while a walk-up bar anchors the venue.

Leila offers an immersive dining experience that combines the rich flavors of the Middle East with a vibrant, authentic ambiance. Orness Design Group worked closely with the restaurant's owners and the design team to create a kitchen optimized for smooth operations, safety, and innovation. The kitchen design reflects the complexity of the menu, combining sleek aesthetics with functional workstations for both efficiency and creativity. The open kitchen concept lets diners see the artistry behind each dish. A focal point of the kitchen is a custom-designed 2.5-ton clay oven that traveled for more than 9 months from London to San Diego. The oven includes a traditional Clayburn Oven, Barrel Tandoor, Robata Grill, and an open flame area for grilling skewers.

MODA Campus Amenities Café (San Diego, CA)

Description: Located within the campus amenities building, the café spans approximately 1,300 square feet and caters to over 600 personnel. It offers fast casual service, featuring a light breakfast, specialty coffees, and a limited lunch menu with hot items prepared using Turbo Chef ovens and a panini grill. For quick takeout, pre-made salads and sandwiches are available. To meet the increasing demand for online orders, an ordering kiosk was added. Additionally, the space includes a catering kitchen.

Kona Village Resort (Kailua Kona, HI)

Description: Renovation of the iconic Kona Village Luxury Resort located on 81.4 acres of stunning oceanfront landscape on the Big Island of Hawaii.

Foodservice Scope: Orness Design Group provided comprehensive design services and permitting for commercial foodservice areas in collaboration with the architectural team. As a specialty sub-contractor, we supplied and installed commercial foodservice equipment for the resort village’s five unique foodservice venues and bars, and employee dining area, all serviced by a central commissary kitchen. The central kitchen manages all food and beverage receiving, baking, meat and fish preparation, bulk cooking, and liquor and wine distribution for the smaller venue kitchens. These kitchens are equipped with Halton M.A.R.V.E.L. on-demand energy management systems and specialty equipment, including a charcoal fuel-burning oven, combi ovens, conveyor dishwashers, and water-cooled refrigeration racks. The foodservice plans were created using REVIT, with BIM coordination for mechanical and foodservice integration.
