Blast chillers are easy to forget, until a busy service, spoiled batch or health inspection makes them urgent.

Cooked food must be cooled from 135°F to 41°F within the required food-safety window. If your blast chiller is drifting out of spec, product safety, consistency and inspection results may all be at risk.

Watch for warning signs such as:
• Cooling cycles taking longer than usual
• The display and an independent thermometer showing different temperatures
• Uneven cooling between trays
• Excessive frost, condensation or unusual noise
• Worn door seals or a chiller that struggles to hold temperature
