Strip a wall in a house of this age and it tells you what it has been through. An old yellow finish under the paper, a patch where something was moved, a corner that has been dark for a very long time.

None of that is on a drawing and none of it is in a price off a list. It is why somebody has to stand in the room before anybody says a number, and it is why the number moves once they have.

Somebody wrote "cool" on this one before it got covered up again. Whoever they were, they have waited a while for anybody to see it.

What did you find behind yours?

Two capped pipes coming out of a wall at ankle height. That is the whole decision about where a freestanding bath goes, and it is taken long before the bath turns up.

A bath against a wall can shuffle along a bit. A freestanding one cannot. Its feed and its waste come out at one spot, and once they are in, that spot is where the bath lives for good.

So you put the bath on the drawing, you set the pipes out to it, and then the boards go on and the panels go up and the room closes over the top of all of it.

The bath in this one is standing there already, with the wall panels behind it still under film. It has nowhere else to be.

Would you have a freestanding bath, or is it a bath you have to clean round?

Nobody photographs the before. There is no reason to. It is the room you stopped seeing years ago, and the day you finally see it again is the day it goes in a skip.

So take a camera round on the first morning, all four corners, before anybody lifts anything. Not for the album. For the argument three weeks later about where the old pipe ran.

There are thousands of photographs of finished rooms in this business and almost none of what those rooms looked like the week before.

Do you have a before of the room you are sitting in?

Shaker is a word people use to mean a look. What you are buying is the door.

Most of the cost difference between one kitchen and another sits in the door rather than the carcass, and whether it is painted is where the price moves. Some firms buy the carcass from one supplier and the door from another, which is where quality slips without anybody seeing it happen.

The other one left on my list is lighting. Recessed into the ceiling plaster rather than screwed on under something, so what you see is the light and not the fitting.

Which of the two is worth more to you, 1 for doors or 2 for lighting?

First thing off the van should not be the kitchen. What is it instead?

The boards. They travel with the units, stacked down the side of the trailer, and they go down on whatever the route is from the door to the room before a single unit gets carried in.

Then the units come off flat-packed, a moulded protector on every corner, and they get stacked somewhere that is not the room they are going in.

None of that is interesting and all of it is the part you notice afterwards, when the job is finished and your floors are the floors you had in July.

This one was a long way from Monifieth and the boards still travelled with the kitchen.

When you have had work done, what state was the rest of the house left in?

Some of what I am asked for, I will try to talk you out of. Four things, and I would rather be argued with than agreed with.

Grey kitchens. I am not putting grey forward any more. If you fitted one, would you fit it again?

Black taps. Is there anything else in the room your hand is on that often? If yours has been in a few years, how is it looking?

Wall extractors, and push to open. I have written about both already, and neither answer has moved.

Tell me which one you would defend.

Take a chimney breast out and the room gets space back you never knew you owned. That is the easy part to picture.

What nobody pictures is the middle of it. Opened up, this one is courses of masonry with a flue liner running up through them. You do not find out what is in there until it is open.

The room looks worse on that day than it will ever look again.

Has anybody here had one taken out? What did you do with the chimney above it?

Three things people ask me for by name. All three get decided before anything is bought, and that is the part nobody mentions.

A hot tap. It gets the kettle off the worktop. Before you order one, ask whether anything has to go in the cupboard under the sink.

An appliance garage. Toaster, kettle, and the air fryer nobody admits to. It wants the sockets inside it, and that gets settled before the plasterer arrives rather than after.

Drawer dividers, and a spice rack in the drawer rather than on a shelf. Both come down to how deep the drawer is, which is decided on the drawing and not in a shop six months later.

All three change what the kitchen is like at seven in the morning.

Which of the three would you want, and which would you not bother with?

Most people carry wet washing across the room in their arms.

In the Monifieth showroom the washer and the dryer sit up off the floor with drawers under them, so both doors open at hand height. The space above them is left open. No cupboard down over the machines, so the basket sits on the machine and the washing comes out of the drum into it.

You give up a wall cupboard to do that. I would.

Kitchens take all the thinking and the utility gets what is left when the money and the wall space have gone. It is the room the house runs on.

The machine will go before the joinery does, and usually long before, so the housing is the part worth deciding once.

How many steps between your machine and wherever the wet washing ends up?

Kitchen worktops get set to a height the specification agreed on, not to the person standing at them.

Around 900mm is the most common answer. It suits somebody of roughly average height, and it's generally fine. It is what the boxes add up to and what everybody has always done.

There is a measuring stand in our showroom that does it the other way round. You stand at it and it reads back a working height that fits you. Come and stand at it if you are passing.

If more than one person cooks, you get more than one number, and that argument is far better had in a showroom than a year later. Where the room justifies it, Dominique will specify two heights: the island at one, the run at another.

Who does most of the cooking in your house, and has anyone ever asked them how tall they are?
